Chipotle Herb Quinoa Tofu Patties (GF)

Makes 7-10 patties

Ingredients

  • 3 cups cooked quinoa

  • 1 block firm organic tofu

  • ⅓ cup nutritional yeast

  • ¼ cup finely chopped green onion, parsley, or cilantro

  • 2 teaspoons garlic powder

  • ½ teaspoon cumin powder

  • Juice of ½ a lemon

  • 2 tablespoons tahini

  • 1 tablespoon Braggs, liquid aminos, or tamari

  • ½ tablespoon chipotle Tabasco hot sauce or any hot sauce of choice

  • Salt and pepper to taste

Method

1. ) Place cooked quinoa in a large bowl. Crumble tofu with your hands and add it to the quinoa. Stir.

2.) Add all other ingredients. Mix thoroughly until the mix is consistent enough to form patties.

Test the patty mix, then add salt and pepper to taste.


3. ) Form 1-inch thick patties and place them on a parchment paper lined baking sheet. Bake for 25 minutes at 385˚ F. Flip patties 15 minutes into baking to brown on both sides.


Highly recommend enjoying these with ketchup OR vegan mayo.. SO GOOD.
