Strawberries with Coconut Whip Cream 

This recipe is inspired by my love for whip cream and berries. Late at night this is usually where my cravings are at. I hope you enjoy this quick and easy vegan dessert idea. To make this recipe keto, just sub the sugar for xylitol or stevia. Those are really great swaps.

Strawberries Coconut whip cream

Ingredients 

  • 1 can of full fat coconut milk

  • 2 cups of strawberries 

  • 1 tablespoon of sweetener (sugar, agave nectar or 1/4 tsp of stevia)

  • Pinch of salt 



How to make coconut whip

1. Start by putting a can of full fat coconut milk in the refrigerator over night or 6-8hours 

2. When chilled take out of the refrigerator and using a can opener open the can. The fat will have separated from the liquid. Scoop only the cream top out of the can and place into a medium size mixing bowl.

3. The mixture maybe clumpy and it helps to smash up and any hardened coconut fat chunks with either your whisk or a fork before beginning whisking. This makes it easier if you are doing by hand. 

4. Whisk the cream vigorously for 5-10 mins

5. While whisking the mixture should double or even triple in volume and start to look like whip cream at this point you can any sweeter you like agave nectar, sugar powdered sugar option also to add vanilla extract or citrus zest for flavoring. 

6. Serve over strawberries and enjoy
