Easy Blueberry Compote Recipe for Pancakes

Prep time 10-20 mins

 

Makes about 2 cups of syrup or compote 

 

Ingredients 

  • 4 cups frozen blueberries I prefer wild blueberries

  • ½ cup coconut sugar or sugar

  • 1/3 cup orange juice

Method

1.) Combine the blueberries, water, coconut sugar, and orange juice in a small saucepan.

2.) Cook over a medium heat for about 10-15 minutes while carefully stirring so that the sugar doesn’t burn. Let cool on stove for additional 10-20 mins before serving. Serve warm on top of pancakes to substitute syrup.
