Cauliflower Cutlets with a Herb Sauce

Prep time 20 mins

Servings 4-5 

Herb Sauce

  • 2 cups of parsley 

  • 4 basil leaves 

  • 1 tablespoon sun dried tomatoes 

  • 1 tsp of salt 

  • 1/2 tsp of pepper 

  • 34 cup sunflower seeds 

  • 4 tablespoons of nutritional yeast 

  • 1/2 cup lemon juice 

  • 1/4 cup water 

  • 2 tablespoon of sun dried tomatoes 

  • 3 tablespoons of cold press olive oil 

  • Pinch of sugar 1 tsp or 1 soft date 







In a food processor add all ingredients and blend until smooth but you can see bits of all ingredients 

Roasted cauliflower cutlets 

Prep time 10 mins cook time 40 mins

Servings 5

  • 1 large head of cauliflower 

  • 1 tablespoon of coconut oil

  • 1 tsp of salt 

  • 1 tsp of turmeric 

  • 1 tsp of pepper

  • 1 tablespoon of potato starch

  • 1 tsp of paprika 

  • 1 tsp raw honey 

  • 1 tsp of chili powder 

  • 1 tsp coconut aminos 


Pre heat oven to 425 degrees 


Method

1.)Wash the cauliflower and dry. Then transfer to a cutting board. Using a sharp knife, start to prepare your cauliflower by gently cutting off the leaves do not cut off the stem or detach the cauliflower from the stem or main stalk, that is what will hold the steak cutlets together. Once all your leaves are cut off you can compost these leaves or roast them in the oven. 

2.) Slice the cauliflower head into 3/4 inch steaks or cutlets and remaining pieces you will roast also.

3.)In a bowl add all ingredients to the bowl except cauliflower and mix with a fork to combine 

4.)Add a tablespoon or spray of oil to a pan. Then Layer cauliflower slices on greased pan. 

5.)Pour over the spice and oil mixture using hands rub mixture all over the cauliflower.

Transfer the cauliflower to the oven let bake for 30-40 mins flipping halfway. 

6.) When done cooking should be fork tender. Plate with quinoa and chimichury herbsauce
