GF Apple Buckwheat Banana Walnut Muffins

Ekadashi friendly breakfast or dessert muffins. These muffins are grounding and comforting and really easy to make. Buckwheat flour is made from buckwheat groats which are actually a grain free, seed. The seed is high in protein and also alkaline. Its got a very beautiful dark grey purplish color! I know many would not think that’s beautiful, but in my mind I always know buckwheat flour from its dark color. You can find buckwheat flour at your local health-food store, or in a supermarket in the baking section sometimes, if you can find it you can also just use a gluten free baking powder or any other type of flour and this recipe will turn out delicious still.

Buckwheat Banana walnut muffins

Servings makes 14 muffins 



Ingredients 

  • 2 cups buckwheat flour 

  • 1 cup blanched almond flour

  • 2 tsp baking powder

  • 1/4 tsp of cinnamon 

  • 1/2 tsp salt

  • 1/2 cup of chopped toasted walnuts 

  • 1/2 cup ripe smashed banana or one smashed banana 

  • 1/4 cup melted vegan butter, or coconut oil 

  • 1 cup non dairy milk 

  • 3/4 cup coconut sugar 

  • 1 tablespoon of lemon juice or apple cider vinegar 🍋 

  • 1/2 cups of apple cubed Granny Smith apple cut small 




1.)In a bowl combine all dry ingredients and mix well with a whisk

2.)In a separate bowl add wet ingredients: banana, milk, coconut sugar, lemons juice, melted butter and whisk to combine.

3.)Combine wet and dry ingredients and mix well.

4.)n a greased muffin tin start adding batter filing each halfway. Adding cubed apples to middle of tin and filling the rest of the tin with batter. Top muffins with a slice of banana and a little coconut sugar 

5.)Bake at 325 for 15-20 mins
